And The Meals I Chose Are…..

French Dip Sandwiches

White Chicken Enchiladas  (I had only ever made enchiladas with Cream of Chicken soup.  Then Sarah told me you should never eat anything that plops–i.e. “cream of crap” as she calls it–so I walked away from enchiladas (almost all together) with my tail between my legs.   So while this recipe still includes the other cheesy, buttery good stuff–it’s still a step up 🙂

So those who suggested these meals will be entered into the drawing for the 3M strips next Saturday, and they will receive double entries into December’s drawing for my favorite shelf.    I must say– ALL the meals sounded wonderful, and I reserve the right to later choose any of the meals not chosen this time.  Also, if you are willing and interested, you may suggest up to three meals a week.  This increases your chances of having a meal chosen, and it increases my repertoire of potential dinners.  Win, win.

Seriously, girls–Thank you SO much for doing this with me.  You really helped to de-stress my week.

    Hoagies. No but seriously, I'm really having hoagies tonight.

    Put all the goods on those bad boys. Lettuce, tomatoes, pickles, banana peppers, onions, provolone cheese, little bit of vinegar and oil, salt and pepper, and then toast them.

    OR, you can make…

    Ramen!

  2. This is really yummy and pretty fast and easy. I also feel as though I am getting a pretty good share of vegetables. If you are concerned about the fat in the sauce, use skim milk and light margarine or butter. Make this recipe if you want lots of leftovers or cut it in half if you just want a little.

    Well-Dressed Chicken (or Pork)
    Serves: 8
    2 cups broccoli, chopped
    3 cups of carrots, sliced
    1 ½ lbs. boneless chicken breasts (or pork chops), cut in ¾” cubes
    2 cloves garlic, finely chopped
    1/3 cup green onion, finely chopped
    3 T butter or margarine
    3 T flour
    3 cups milk
    2/3 cup Parmesan cheese, grated
    24 oz bow tie pasta, cooked
    2/3 cup Parmesan cheese, grated
    4 large tomatoes, diced
    3 T parsley, chopped
    Salt and black pepper to taste

    Cook broccoli and carrots until tender (I like to boil the broccoli and steam the carrots but that is personally preference). Drain and set aside. Spray a large skillet with cooking spray and heat to medium-high heat. Add meat and garlic; cook 5 to 10 minutes until meat is no longer pink. Add green onions and sauté 1 minute. Sauce: melt butter in small saucepan over medium heat. In a separate container, blend flour and milk; add to saucepan. Cook and whisk constantly until mixture is smooth and thickened. Stir in 2/3 cup of Parmesan cheese and remove from heat. In a large casserole dish, combine pasta, meat mixture, vegetables and sauce. Top with 2/3 cup of Parmesan cheese, tomatoes, parsley, salt and pepper. Toss and serve.

  3. A meal every mom who grew up in the southwest and doesn't have much time should know:

    Pretty authentic tacos:
    rotisserie chicken (I like costco's)
    corn tortillas
    chopped sweet onions
    chopped cilantro
    chopped tomatoes
    avocado chunks
    little lime wedges (these are the key to the recipe)
    salt

    pull the chicken off the chicken. heat up the torillas with a little bit of cooking spray in a skillet over pretty high heat. put all the veggies on the tortillas with the chicken. Squirt on the lime juice and give it a sprinkle of salt. MMMMMMM. So delicious.
